No matter the plan... we all Blog to Lose!

I'm sharing the links to all the recipes that I have been enjoying cooking over the last month.  I love to make a pot of soup for the week.  There's nothing easier or greater during the cold weather, just scoop into my Pyrex bowls and take to work.  I usually do soup and salad but if I get lazy and don't pack a salad, I still have a quick healthy go to. I've made this one a few times and it is fantastic and addicting  Butternut Squash, Kale and Italian Sausage Soup I usually double it.

This next one I doubled Stuffed Pepper Soup.  I love that the brown rice is cooked separately and I kept the leftovers in separate containers for ease of portioning.  We had it for dinner and I took it to work for lunch a few days then I morphed it into something entirely different, Chili!  We had that for dinner then I had a couple more lunches.  See what I'm getting at?  If you make things and have planned enough so that you can eat it a few times then all you have to do is scoop and heat.  I like to freeze some in individual servings.  the more that you do this, the more that you can mix it up with different soups throughout the week so that you don't get bored of the same thing.  I'm usually ok with the same thing for a couple days in a row.    

This one is great for a quick weeknight meal Sheet Pan Italian Chicken and Veggie Dinner.  Again I recommend doubling for leftovers.  See a theme here?  Make prepping easy on yourself!

This is great if you are aiming to impress Stuffed Baked Pork Chops with Prosciutto and Mozzarella
One night last week I was making Cheese burgers and wanted a side to go with it.  Something like fries but lower calorie.  So I turned to Healthy Baked Carrot Fries with Garlic Aioli.  Anything would taste amazing dipped in this!

The weather her is getting too warm soup already; but I'm bookmarking this for next fall.  I love the idea of baked carrot fries.  Will def try these soon.  Thanks for sharing.

I also make enough for dinner to have for lunch the next day.  But one day left overs is about my limit.  Unless its eggplant parm.  OHHHHHHH I love that stuff.
