No matter the plan... we all Blog to Lose!
So another Saturday, another wedding to serve. My co-workers were giving me props yesterday, they noticed that I have been bringing my own food to work for the past few weeks and I have not been snitching goodies. I have realized that my snacks really get me through a very physical 10 hour day wedding. I fueled up consistently all day and it surly makes a huge difference! I ate breakfast and lunch at home. Apple pie oatmeal plus 6 egg whites & green tea for breakfast :)
Apple pie oatmeal
6 oz water
1/4 C old fashioned rolled oats
1/4 C oat bran
1/2 C apple sauce
1 apple peeled, cored and chopped
1/2 T maple syrup (optional could sub stevia or other sweetner)
cinnamon to taste
Bring water to boil add apple sauce, apple slices & oats. After 5 minutes turn down heat & add oat bran, maple syrup & cinnamon. Will be thick & ready in a couple minutes, top with more cinnamon! This makes a huge portion so I usually split it with Olivia my 9 yo daughter who has been requesting this breakfast frequently!
I ate lunch at home right before we left for work broiled salmon & broccoli rabe plus my water. I packed my cooler with 3 snacks, dinner plus lots of water. The water at work tastes gross to me compared to my well water that I drink no problem. First snack was a light string cheese stick and an apple that I ate a couple hours after we got to work. Then for dinner I had a small serving of left over Eggplant Parmesan (if you think you don't like eggplant, please try this recipe!) and a veggie packed salad. My next snack was cut up veggies and a hard boiled egg and I got to try the Caprese salad since there were extras after the guests were served :)) Then later when most of my co-workers were indulging their sweet tooth I remembered I still had 1 snack left!!! Greek yogurt with a little stevia and cinnamon mixed in, topped with fresh strawberries. Totally hit the spot & tasted like dessert instead of like just any old yogurt! I drank 12 servings of water at work, it was so hot & humid it sucked, but I'm glad I was so well prepared. For the 3rd Saturday in a row the employee meal that was served was pizza, that's it no salad or fruit or anything. I'm so grateful that I've been carving out time to meal plan & prep food, it is the biggest secret to my success, especially when I have to work!
I'm working 4 nites this week so I have some food prep ahead of me! Not sure what I'm going to make but I'll keep you all posted once I figure it out :) I really like being home for dinner with my family, but with only a few weeks before school starts I know that my studies will not allow me to work as much and wedding season will be winding down in the fall so I gotta make money while I can!

I'm always super impressed when people work around food (especially yummy catering food) all day long and are able to stay on plan. You have the right mindset and planning and the frequent eating comes in handy. My brother used to work in catering while he was in college and he said the best part was the delicious (and free) food they got to eat.
Thanks for the oatmeal recipe. I think I'm going to try a cold version of it for tomorrow's breakfast. Yum!
