Blog to Lose

No matter the plan... we all Blog to Lose!

I slept so well last night. I was way more tired from starting back to work than I realized. I got up late and we were glued to the Mexico vs Brazil soccer match for the Olympic Gold. The city went crazy after they/we won!!

I then spent several hours at Costco. I love going there for things that I can't get anywhere else here that I know of. I was trying to think quick and easy especially with starting back to work. I 'cooked' (as in threw in the oven frozen from a box) some 160 calorie mahi mahi w/ a mango sauce. That with a huge salad was just enough. The fish was just OK and I didn't even finish mine. I just don't know how to cook fish very well I guess. With the exception of salmon I always feel like I've eaten a 'diet' meal afterwards. Who has a delicious, rich-tasting-but-still-healthy recipe for fish? I need one!

Breakfast: coffee, oatmeal, almond milk, peanut butter, cocoa, maple syrup (400)
Snack: um....nope
Lunch: 1 ww thin w/ cream cheese, a few sd tomatoes (no oil), 90 g smoked fish, 1 tomato (450)
Snack: 1/2 c of fresh bean/corn salsa, 1 svg veggie chips (250), 1 dk choco granola thin (80)
Dinner: big salad w/ very lite homemade balsamic (~300), 1 piece of mahi mahi w/ mango sauce (160)
Total: ~1700

Exercise: Planned off day

Thanks, Jessica! The flounder with tomatoes looks so fast, easy and healthy! I've checked out the skinnytaste site but never made anything from them.

Gina's recipes ( author of Skinny Taste) are my favorite!!!  I haven't tried any of her fish recipes actually now that I look at her site!  I want to try this flounder piccata recipe and this one, both look really good to me!  I made this the other night & added shrimp, it was amazing!!!

Recipegoldmine and allrecipes have lots of good recipes! I like that allrecipes has reviews from people, too-so you know if it's good or not-and if people made any modifications on the recipe to make it better.

Too many times, I've gotten recipes online and they weren't that good-but the ratings help so it doesn't happen as often. :)

I also love Skinny Taste.  I've tried a lot of her recipes and they have all been really good.  Being someone who can't eat fish/seafood, I haven't really tried her fish recipes though.  It's good that you are able to get some of the things that you may not be usually able to find in Mexico.  I'm sure it would make it hard to live in another country if I couldn't have some of my go-to foods!
