No matter the plan... we all Blog to Lose!
Today was our first official work day! It started with a breakfast provided by our administrators, but I was good and brought my own breakfast from home. Then we sat through a few faculty meetings and I stayed late today and worked an hour in my room trying to get a few things set up. There is just not enough time! I have to unpack all the boxes (I had to pack everything up due to the construction in my building.) and find new homes for some of my supplies.
Here's the meal plan for today:
B: 1 c. vanilla yogurt with 1 cut-up peach and 1 c. blueberries
L: 2 beef tacos w/mexican rice (about 1/2 c.) and 1/4 c. refried beans, lettuce, a few tablespoons shredded cheese and 1 tbsp sour cream
Snack: I will confess that I had a diet coke
D: leftovers: 2 beef tacos and 1 black bean/zucchini taco; 1/2 c. spinach macaroni salad
Dessert: 1/2 c. black cherry choc. ice cream (only if I am still hungry after the big dinner)
I can't believe school has already restarted, but I see that Halloween has been displayed in the stores for 3 weeks!! Now that is scary. Mexican food is one of my favorite and it looks like you had some really yummy stuff today that was healthy. You keep it up!!
