3 mashed bananas
2 cups frozen blue berries [still frozen]
1 cup skim milk
1/4 cup splenda
1 tbls Baking powder
3 cups quick oats
Mix all together, and let sit for 5 mins.
Spray a muffin pan with non-stick spray.
divided batter into cups, filling them to the brim.
Bake at 375 degrees for 20 mins.
Also the blueberries can be replaced with almost any fruit you want [citrus would not work well]. I have found frozen berries work better because they do not get over cooked. I made them this morning with frozen raspberries, just as yummy!
One plus to these is that if you have 2 of them for breakfast [as i do on the way to the gym] it counts as 1 serving of fruit!
