So, I make this dish regularly and usually get at least 1 request for it, so I figured I'd share it on my blog. So here it is, my healthified Southern Squash Casserole recipe:
3 medium sized squash sliced into half moons (I use a mixture of yellow and zucchini)
1 medium onion chopped
1/2 cup fat free cheddar cheese
1/4 cup reduced fat parmesan cheese
1/4 cup fat free sour cream
Salt, Pepper, Onion Powder and Garlic Power to taste (I don't measure seasonings,… Continue

I started out with grand plans for today. I'm a teacher, and today was our first day back. No children yet, but teacher inservices and training. Today was just sort of disappointing. I'm a little disappointed in myself, and wish circumstances had made it easier for me to get out of the house tonight! I know, I know, not an excuse! But please hear me out: I'm letting myself off the hook in terms of exercise because COMBINED I probably got about three hours sleep last night. Add to that, i'm… Continue

Went to Chick Fil A for dinner, had classic chicken sandwich with Texas Pete instead of the mayo/ketchup combo I used to have. Had one of their awesome side salads with sunflower seeds (although Kid ate most of the seeds, which is good too), and diet lemonade. Hubby got Sbux afterwords, and I declined. We did get 6 more of the rockinest coffee mugs ever though, to make our set of 8 complete. On clearance, plus Sister-in-Law discount.
Then we did the unprecedented for the Cooper… Continue

I came across the below writing and I wanted to share it with all of you. I thought it would be instrumental to your weight loss journey and specifically when we face choices to eat something that we so badly want or to chose something else that will keep us on track. Sometimes we do chose the opposite and we then sometimes find ourselves beating ourselves up for our lack of will power, etc. Heck..no one is perfect...just pick yourself right… Continue

I've been trying to do it alone for too long. Sure, I have support here (which is great). And sure, I have support with friends/family that are trying to lose. But I've decided that I cannot do this without my weekly meetings. I've tried, but it just hasn't worked. I do well for a few weeks and then I go right back to old habits. The meetings seem to work well for me. I am super competitive and I can't stand the thought of paying someone to step on the scale to tell me that I am fatter than I… Continue

This morning was my weigh in day and my first week back on program & I lost 6 pounds!!! Yehee!! I started at 172...so down to 166.
This past week has had its ups and downs for me but I did my best to stay focused on eating properly and exercising. Today was another hectic one so I was not able to make it to the gym but I am shooting for it tomorrow.
Happy with my success this past week. I just keep telling myself "I am… Continue

I went to a wedding this weekend for my friends that were getting married. It was a great day. The ceremony was outside and it was raining ALL day, but before the ceremony, it cleared up and the sun came out! How perfect is that? It was so nice - my friend's dad is a minister so he married the two of them. Half of her bridesmaid were in tears through the ceremony and one of my friends who was a groomsmen is still denying that he cried even though we all saw!
The reception was great… Continue

Ha ha. I had the intention of blogging anyway, but figured your bedrested self would appreciate a shout-out!
I survived the Minnesota State Fair today, and I actually had a fabulous time! Minnesota seems to think the end of August = Fall, so the air is crisp and cool- just fine with me. My mom and I walked for about 4 hours and I was exhausted by the end! I really wish I would have worn my heart rate monitor just out of curiosity to see how many calories that would burn. That would… Continue

We had our garage sale on Saturday, it was a success. We got rid of pretty much all of the big items and just had a little junk left over but made over $600. Yes! I saw the 160's on my home scale for the first time in a few months and I was able to fit into some of my pre-wedding clothes. LOL. Thankgoodness! I felt alot better about myself and had a great time at the Toadies concert with my girls. Here is a photo -

I'm doing all 3 of the challenges
. Here are today's results:
Push Ups (Rank 3) - Girlie Kind: 10, 12, 7, 7, Max 12
Sit Ups (Rank 1): 3, 4, 3, 3, Max 10
Squats (Rank 3): 13, 6, 9, 9, Max 40
It was much harder than it seemed. It could be because I did it in the late afternoon after I had already been doing a bunch of stuff today. I also had to help MIL… Continue

I've had a headache since Friday night. Saturday night I was in tears it was so painful. It's liveable right now, but it's still hanging in there.
This has thrown my exercise plans right out the window. I've been either too drugged up, in too much pain, or just too tired to get on the treadmill. I have tomorrow and Wednesday left in this week to get in 4 workouts...I don't think that's going to happen.
So my rules for next week very well may stay the same...sort of a… Continue

So I am STILL in my funk. What the hell. Get over it I say.. get over it!! So my hubby bought me the Nike + Ipod last week hoping that will help me with my funk (what a sweetheart). So Saturday I got my butt to the Y and calibrated it which was a miracle because I had no modivation what so ever. Tonight, well actually in 10 mins I am leaving work and going to the Y to have a nice work out. My eating habits today have not been too bad if you don't count the handful of Runts and two Dilly bars… Continue

OK....so I went to WW on Friday. I skipped Weigh-in as I just wasn't ready to face the scale. I KNOW I am up. And probably a pretty hefty amount. I left Friday's meeting saying I was going to "track" everything starting that moment etc. Then Saturday the hubby decided we should go to the Twins game and on the way there we went through the drive-thru for a burger so we wouldn't have to buy food there. I got one of those EVIL 1/3 pound Angus burgers. OMG...it is to die for. And take my advice...… Continue

I am proud of myself for getting out of bed this morning and going walking. It has been months since I stopped walking or exercising at all and even though my first thoughts this morning were, "I'll start tomorrow" and even though it took me a whole hour to get myself out of bed, I did it. It is hot and humid this morning but it really felt good to be out walking. It is such a great way to start the day and every time I do it I love it, so I just can't figure out why I'm so hesitant to do… Continue

I've survived so far! Go me :)
I'm still going to my WW meetings, so my loss for the week on Saturday was 11 pounds, but that gave me a 5 pound star! (Don't ask, it involves math and weight gain, two things I loathe.) Yay!
I was still on plan all weekend with South Beach. I think I ate too little on the veggie front because I saw a slight weight gain overnight, but that also may have to do with the evil monthly visitor looming this week.
I haven't run since last… Continue

Okay, well today is going to be great as well. I already have entered in breakfast and lunch in my food log. Breakfast was 1c Dannon All Natural Vanilla (not low sugar, but I'll buy that next time), and 2 of those tiny plums (about 1/2c plum altogether). Light breakfast, but that's okay. Oh, and of course coffee with 1T Int'l Delight (no extra sugar, but that creamer is practically like melted marshmallows).
Lunch is leftovers from last night, smaller quantities. Jasmine rice,… Continue

So, I forgot my gym is closed until Thursday for cleaning this week. That means no scale for me! I am so bummed because I wanted to see my results. I used all of my flex points this past week but I did a really good job yesterday. I even turned down stuffed shells and garlic bread from the neighbors. They invited us to dinner at the last minute. I didn't panic. I ate my planned meal before we left and then I just politely told them I already ate. It worked out just fine because they have a 3… Continue

Lost three pounds last week. So far I've lost a total of 12 pounds! That's exciting! I didn't walk Saturday or Sunday. Took the weekend off because of hip pain. It's feeling much better now so we are going to be walking again like usual. I actually missed walking this weekend. I've gotten to where I really enjoy it. It makes me feel good to get out and move. Ready to do the same for this new week! =D

So it's been along week, followed by along weekend. I've eaten most of my Flex points this week, something that I try very hard not to do. The good news in all of this, is that I wrote down everything and I feel good about that. Also I wasn't eating crap just to much of the good food that I've been making for dinner. As for my cold I think it's starting to go away, I am feeling a little bit better everyday.
I'm going say something that I never thought I would say, but here goes. I'm… Continue
