Hi, All,


Sorry that I've been MIA from the whole weight-loss side of life. Since our adoption fell through a few weeks ago, I've been in a funk in a big. Way. Husband says to me this morning, "Everyone at the gym asked after you today. And Erin mentioned that she hasn't seen you at the gym in a while. So tomorrow morning when I go to spin, I'm dragging you with me to the gym."


Probably a good thing.

Those pumpkin/oatmeal muffins are good, but I think next time I might add more sugar as I like things just a bit sweeter.

Bean Surprise is a recipe I found in a cookbook. McDougall's actually.

What is in it??

1 chopped onion

1 chopped red pepper

1 chopped green pepper

1 clove garlic

1 can black beans

1 can red beans

2 cups corn

1 can stewed tomatoes

2 tsp chili powder


Cook the onions & peppers with the garlic until veggies are soft

Add all other ingredients and cook 10 minutes

Makes 1 huge pot of delicious bean surprise that you can roll in tortillas or just eat right out of the bowl.
