I noticed I hadn't really done a VOTW for about a month! Oops! Got too busy!

So I just put veggie of the MONTH. You can write your veggies weekly on here or a summary.

I was going good w/cucumbers until they got to be 75 cents each. No thanks.
I did cauliflower, mushrooms, spinach--basically a whole variety now which works out well to avoid burnout. :)

We are going crazy on green peppers, broccoli and zucchini.  I had a pot luck and brought grilled zucchini and eggplant spears and made non fat greek yoghurt tatziki dip.  Went over really well!  We always have standard salad on hand (mixed leaves, green peppers, tomato, cucumber etc).


This month (Nov) it's going to be kale (in lentil soup and in a sauce for pork chops), zucchini/summer squash (as a side in everything and also in a ground turkey "no pasta lasagna" bake- uses sliced zucchini instead of pasta) , spinach in shells and added to salad. 




I'd love to see your recipes for that! :)

I'll have to find the actual recipe for the soup but it's garlic, onions, carrot, lentils, smoked beef sausage (optional) and kale.  basically sweat the carrots, onion and garlic, add the lentils and sausage, water or stock and bring to a boil turn down to a simmer for 30 mins, add kale, bring back to boil, turn down to a simmer until lentils are tender...  I used to make it all the time when we lived in a colder climate! 


With the pork chops, brown pork chops, take them out of the pan, add garlic and onion, sweat it off...make a roux with a little flour,  add stock or water throw in chopped kale and reduce. Season and serve over pork with fresh veggies!


I tend to use water instead of stock...  but then I'm used to not using too much salt!  Enjoy!  :o)

Delicata squash. At $0.68 a pound it was a good buy. I just recently tried it and WOW! I love it. I went back to the store to buy a few more.
