Potato, Ham & Egg Microwave Scramble (great for at work filling breakfast)

Ingredients:
1/2c. Frozen cut red potatoes
1 Whole Egg
2 Egg Whites
1 Slice Ham
Cooking Oil Spray

 

Place frozen potatoes in a microwave safe bowl, add 1T water and cover. Microwave for 2 minutes. In a seperate bowl whisk the whole egg and egg whites. Add preferred seasonings (I used some Southwest Chipotle Mrs. Dash, Salt & Pepper). Cut ham slice in to small pieces. Once potatoes are done, remove from bowl. Rinse bowl and then spray with cooking spray (I use Canola Oil Spray). Return potatoes to bowl along with egg mixture and cut ham. Mix together. Return to microwave and microwave on high for 1 min and 30 sec. Take out and mix up. Put back in microwave for an additional minute. Since microwaves vary, you may need to mix it up and add additional time. Be sure the egg is cooked completely before eating. Enjoy!

Yum! This sounds great and so easy. I work and go to school full-time so i'm always in a rush, and this sounds right up my alley! Thanks for posting :)
