I had some leftovers from the last few night's dinners, and I decided to make a pizza for lunch, it was really yummy and filling!
1 roma tomato
1 whole wheat tortilla (I used a 2pt. trader joe's tortilla)
1 tbsp. trader joe's pizza sauce
1oz shredded cheese (I used monterey jack)
3oz. grilled chicken breast
cut off 3 slices from the tomato. Place tortilla in a large skillet, heat on med. low. Spread pizza sauce, add chicken, then add the cheese, on top place the three tomato slices. Heat approx. 5 minutes until the cheese is melted. I got 8 pts for the whole thing! Very tasty. I also used the rest of the tomato chopped, added chopped cucumber and baby carrots with a drizzle of light balsamic vinagrette for a veggie serving! :)
